  • 2 Eggs
  • One diced onion
  • Few cloves of chopped garlic
  • Minced ginger
  • Chopped green chilie
  • Raw peanuts
  • One or two dry chillie for tempering the ghee
  • Panch foron ( mix of cumin, fennol seed, faungeek seed and nijella seed)
  • Singeture dry roasted spice powder
  • Potato cube or any other vegetables (optional)

50-50 Rice and pulses mix (lentil, moong and pigeon pea) is the base ingredients for khichri. Wash it thoroughly with clean water 3-4 times then drain all water.

Method For Making Indian Khichdi With Egg And Pulses | Unique 10 Minutes Cook

Follow the method word by word. You can cook the same dish with no cooking skills.

Put a pressure cooker on medium-high heat. Put 2 tsp of ghee into the pot with a little bit of mustard oil to prevent ghee from burning as well as to add a peppery flavour to the dish. When it starts to smoke add dry chilli and panch foron to temper the oil-ghee mixture with its flavour. Add chopped onion, ginger, garlic and green chilli together and stir almost constantly to prevent burning. When the onion starts to become translucent add peanuts. Fry for 30-40 seconds. Crack two eggs into it and stir well. Fry until eggs smell So damn good and become like the picture below.

The most important thing is – Never stop stirring to prevent burning.

Add rice and pulses, half teaspoon of turmeric powder and continue stirring until all raw smells go away and the whole thing smells kind of roasted. It will be looking a bit dry and roasted like the picture below.

Now add water double of a rice-pulses mixture by volume. Add salt to taste. Add signature dry roasted homemade spice powder. Cover the lit very well then cook to 4 whistles. After that turn off the heat and let it rest until the vapour pressure inside the pot settles down completely. Now serve hot as mentioned above. Enjoy the meal.
